Going Bananas!

keep calm and eat a bananaIt’s a little ironic that I’ve been inspired to do a post on bananas, mainly because they aren’t one of my favourite fruits and just the other day I was moaning to The Boyfriend about how I don’t particularly like banana based smoothies.  Moaning aside, they are a good source of vitamins, minerals and fibre and if you’re like me and don’t dig them much, if you dress them up well enough, they can be quite delectable. Now you know I’m not much of a calorie counter but I do try to keep things as healthy as possible.  For the recipe’s that follow I suggest you use organically grown bananas, a good quality dark chocolate (I’ll shout at you if I find out you’ve used sugar laden crap!!) and if you’re not much of a peanut fan, get some almonds or macadamia’s and the same nut butter.  Wellness Warehouse have a great variation of nut butters on their shelves. I’ve picked four recipe’s that seem simple enough yet need some prep and set time, so bear that in mind.  Here goes…

Chocolate Bananas with Nut Sprinkles:

– Peel and cut bananas to desired size – Pierce with lolly-pop stick – Melt dark chocolate in a bowl over boiling water – Be careful that bowl does not touch the water and not to over heat chocolate! – Dip prepped bananas in melted chocolate and sprinkle with chopped nuts of choice – Set aside to cool and/or freeze.

Chocolate Nut Butter Bananas:

– Peel and cut bananas to desired size – Smear banana pieces with nut butter of choice (you can also make little sandwiches) – Melt dark chocolate in a bowl over boiling water – Be careful that bowl does not touch the water and not to over heat chocolate! – Dip half of the smeared bananas in melted chocolate (you can dunk the whole thing if you like) – Freeze for 15 – 30 min

Chocolate Dipped Fruit Skewers:

– Peel and cut bananas, pineapple and strawberries to desired size (you can use any fruit combo! – Stack a piece of each fruit onto a skewer or toothpick – Melt dark chocolate in a bowl over boiling water – Be careful that bowl does not touch the water and not to over heat chocolate! – Dip half of the fruit skewer in melted chocolate (you can dunk the whole thing if you like) – Set aside to cool

Chocolate Bananas with Coconut Sprinkles:

– Peel and cut bananas to desired size – Melt dark chocolate in a bowl over boiling water – Be careful that bowl does not touch the water and not to over heat chocolate! – Dip prepped bananas in melted chocolate and sprinkle with shaved or dessicated coconut – Set aside to cool and/or freeze.

A great alternative to any dessert and also a great snack option especially for those with a sweet tooth.  Let me know how they turn out and who you feed them to… or if you keep them all to yourselves! 😉
